This recipe is easy to make with a delicious result. It’s an easy way to use some over ripe bananas instead of chucking them away with the ingredients easy to find in the shop. I hope you like it as it’s very nice!

Ingredients
Serves: 12 

  • 250g Plain Flour

  • 1 Teaspoon of Bicarbonate of Soda

  • Pinch of Salt

  • 115g Butter

  • 115g Dark Brown Soft Sugar

  • 2 Eggs, Beaten

  • 500g Mashed Over-Ripe Bananas

Directions

  • Preheat the oven to 180 C / Gas mark 4. Lightly grease a 23x13cm loaf tin.
  • In a large bowl, combine flour, bicarbonate of soda and salt.
  • In a separate bowl, cream together butter and brown sugar.
  • Stir in eggs and mashed bananas until well blended.
  • Stir banana mixture into flour mixture; stir just to moisten.
  • Pour mixture into a prepared loaf tin.
  • Bake in preheated oven for 60 to 65 minutes, until a knife inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 minutes, then turn out onto a wire cooling rack.

Notes

  • I’m not yet a good enough baker to be making my own recipes. The point of sharing recipes on my blog is to show what happened when my family and I baked the recipe. I’m going to share my pictures and my experience making the food, so that other children can see if the recipe looks easy for them to do and decide if they think they’d like to have a go too. The recipes will always come from another website we’ve found. Hopefully, there’s some benefit in me finding recipes that you might want to use. I’m not trying to take credit for coming up with the recipe so I will always share the original recipe link at the bottom here.
